Keto Lemon Cheesecake Balls Recipe
Are you looking for an easy and delicious keto dessert that doesn’t require any baking? Try these yummy keto lemon cheesecake balls.
These low carb keto fat bombs are so simple to make and are the perfect mixture of tart and sweet. The perfect refreshing dessert on a spring or summer day, and so healthy you could even eat them for breakfast!
Here’s how to make them:
- 1/4 cup cream cheese at room temperature
- 1/4 cup softened butter
- 1 teaspoon fresh lemon juice
- 1 teaspoon vanilla
- 1/2 cup almond flour
- 2 tablespoons keto friendly sugar substitute
- 3 tablespoons keto friendly confectioners’ sugar, divided
- 1 cup shredded coconut, divided
Makes approximately 10 to 12 balls.
Step 1: In a medium bowl, add cream cheese and butter. Mix well.
Step 2: Add vanilla and lemon juice and mix well.
Step 3: Fold in flour, sugar substitute, 1.5 tablespoons confectioners’ sugar and 1/2 cup coconut until mixture forms a dough like consistency.
Step 4: Freeze mixture for about 10 minutes.
Step 5: Remove dough from the freezer and roll into small balls (about 1” diameter.)
Step 6: In a small bowl, add remaining coconut and confectioners’ sugar. Mix well.
Step 7: Roll each ball in the coconut mixture. I also colored some sugar substitute yellow and sprinkled that on my cheesecake balls for added color. This of course is optional.
Step 8: Place back in the freezer for about an hour.
Step 9: Serve and enjoy!
Store the leftovers in an airtight container in the fridge if you like them softer or in the freezer if you like them firmer.
